Mise en place is a way of thinking

I started washing pots at seventeen because I needed the money and stayed because a head chef caught me tasting the staff meal and said 'you've got a palate — don't waste it'. Sixteen years, three countries and two kitchen openings later, that one sentence is why I teach: because the right word at the right moment makes a cook.

I've run à la carte service for two hundred covers and I've walked a shaking eighteen-year-old through their first solo section on a Saturday night. Both need the same thing — a calm voice and a system you can trust. My students leave knowing not just recipes but how to think like a chef when the tickets pile up.

If your culinary school or kitchen wants an instructor who has actually done the job at a high level and can teach it without the ego that usually comes attached, my whites are pressed and my knives are sharp. Respect the ingredient. Respect the line.

Cooking looks like flair on television and is actually discipline in real life. Mise en place — everything in its place before service — is the whole craft in three words, and it's a habit of mind long before it's a tidy station. I teach cooks to prep like the rush is coming, cook like the ingredient deserves it, and clean like their name is on the plate. Flair is what's left once the discipline is automatic.

  1. PrepMise en place first, always. A cook who preps well has already won most of service before a single order lands.
  2. TechniqueThe fundamentals that never change — heat control, seasoning, knife work. Master these and every recipe opens up.
  3. TasteSeason, taste, adjust, repeat. I teach the palate as a tool you sharpen, not a gift you're born with.
  4. SendConsistency under pressure. The tenth plate at the height of service is as good as the first, or it doesn't leave the pass.

Sixteen years, station to pass

Senior Culinary Instructor

Lead instructor for the professional culinary diploma. Rebuilt the practical curriculum around mise-en-place discipline and real service simulation. Over 300 cooks trained; graduate placement into hotel and restaurant kitchens above 90%.

2013 — 2018

Head Chef

Verde — modern Indian, Bengaluru

Ran the kitchen and the pass for a 90-cover restaurant. Built the brigade, wrote the seasonal menus, and held the standard through two openings and a critics' award.

Worked up the stations — larder, sauce, then sous — in high-volume hotel and fine-dining kitchens. Where I learned the line, the pace, and the discipline I now teach.
